Il Panforte del Mugnaio

A family recipe, rediscovered.

Crafted by hand in the Casentino valley, in the heart of Tuscany.

Made with almonds, honey, candied citrus peel, figs, spices, and Vin Santo, our panforte is deeply rooted in tradition and has been refined across generations to achieve an impeccable balance of flavor: rich, aromatic, and never overly sweet.

This recipe, discovered in my grandmother's cookbook, has lived in our family for generations. She brought it with her from Asciano, near Siena, when she joined my grandfather in Moggiona, a village in the heart of the Casentino ( now within the Casentino Forests National Park).

While my grandfather’s family worked as millers, my grandmother raised children, welcomed relatives and friends to her table, serving her highly anticipated Panforte on special occasions. The historic water mill of Moggiona, along the Sova stream still exists, quietly nestled in the forest and in history. Yet, my grandmother's legacy of panforte finds new life as a personal project, a journey of research and refinement that gives rise to something both authentic and contemporary.

OUR STORY

Our panforte is not meant for mass production, Every piece is made with care, following a process that respects the ingredients and intention of the recipe.

It is baked in a traditional wood fired oven, resulting in a grounded and harmonious panforte: never too sweet, always full of character.
